What is Fuse? Is it a transient night club drunk on its own strenuous “with it” posture? Or is it a restaurant with some of the most interesting food to come out of Dallas in a while? Unfortunately, it’s both. Fuse’s TexAsian cuisine is a remarkable, well thought out meshing of Asian food with Texas ingredients and flavors. And vice versa. The salmon and sushi are both excellent. Yet you may find yourself wishing you could enjoy it in a crisp bistro instead of a dusky club.

Little Katana on Travis Street is an inventive offshoot of the tiny sushi bar in the Galleria expanded to a full kitchen that prepares dishes with Japanese, Korean and Thai influences. In addition to fresh and relatively inexpensive sushi, Little Katana offers a variety of steaks and other meats cooked on a custom-engineered grill to tame the intense heat generated from the imported Korean oak charcoal the kitchen uses. Results can be mixed. Steaks can be rich and juicy, or leathery and parched. Ahi Tower, a silo of tuna, fake crab and avocado layers, is delicious. So is the mango cheesecake, served as a mess in a sundae glass. Watch the service though.

This sleek "edgy" restaurant lounge is earnestly hip. But don't let that scare you off. The Korean creations are stellar and the sushi is top-notch, if you don't let the intrusive techno-crud on the sound system spoil your appetite.

Fast food has sped to a higher life form: Indian. Imagine takeout ventilating from the sack with clove, cumin and coriander on its breath. Imagine a plastic clamshell steaming with lamb balti, tandoori chicken and vegetable masala with a side of vegetable samosas or exotic hot wings. Now groom your lip with a cool mango lassi in a clear plastic cup through a straw. Gripping.

Jump into the way-back machine when you visit this Addison-area brewpub. It's like a trip to the '70s singles scene. Only the hanging ferns are missing. Instead, you'll find hopeful hangers-on yakking into cell phones on the patio or vying for elbow room at the bar, where there's a lavish selection of imported brews. The regulars are mostly middle-aged cubicle cowboys scoping the scene for younger, cooler women (there are a few) and gingerly checking their combovers for strays. If you can ignore the swingle aspect and the loud retro tunes (Stevie Wonder, early Madonna), there is a terrific Mex-Caribbean menu here. We were happy with the just-right pile of seafood nachos, and the po'boy burst with crispy bites of shrimp tucked into a buttery French roll, accompanied by a pyramid of delicate gaufrette potatoes. The generously sized grouper sandwich comes grilled, blackened or zinged with jerk seasoning. There's barely room for homemade coconut ice cream and warm Key lime pie, but they're worth stretching the waistband.

This stylish, reasonably priced bar-restaurant is suh-weet. Literally. Sugar is the predominant flavor on its menu of Cuban-influenced items, but the dishes mostly work, even for those without a sweet tooth.
