Loud colors—coral, aqua—crackle off the walls. Zoom is a Thai-Vietnamese linkage, and the results can be extraordinary. The deep-fried fish cakes are supple and moist, the chicken soup with lemongrass is bright and complexly layered with flavor. Decent wines, too, which work well with most of this food as long as it doesn’t zoom in with a blast of chili.

After spending nearly 13 years in New York City’s trendiest neighborhood, Tribeca, creating and specializing in Vietnamese cuisine, we lost our lease and were forced to set up a new restaurant elsewhere. With our parents getting older and their desire to live in a warmer climate, our choices were limited to a few cities. We embarked on a month long quest for a suitable location for our new restaurant and searched for places to set up in California, Houston, Dallas, Florida and Atlanta. We ultimately decided on Dallas.
