When we came to Dallas in 1985 our culinary and cultural roots had already been formed in Italy. Before coming here we had never heard of Marinara Sauce, for us it is simply Tomato Sauce. We had never heard of Fettuccine Alfredo, nor of Pepperoni Pizza. Never had we seen a restaurant in Italy offering Spaghetti and Meatballs. We did not know what a Caesar’s Salad was. We had never know of anyone in Italy serving olive oil and vinegar as a condiment for bread, nor of anyone preparing garlic bread (Bruschetta is a popular item in Tuscany but it is another thing entirely). From where we come, salad is never served with pasta (it is a side item which accompanies the second course) and to degrade pasta to a side order is the most offensive sin in our culinary religion.
